In this easy salmon recipe, salmon fillets are marinated with lemon, dill, garlic and a little honey. The salmon is then baked with asparagus to produce a simple weeknight dinner the whole family will enjoy! Lemon dill salmon and asparagus is cooked on a single sheet pan and can be ready in and a half an hour – it’s that simple!

Does anyone else feel like as soon as the weather turns nice you get ill? I’ve had a cold now for the past week and it’s driving me insane! I don’t really feel doing anything at all – I kind of just want to sleep until it goes away. But life doesn’t work like that 🤷‍♀️🤷‍♀️🤷‍♀️


Thankfully this salmon recipe is making life just a little bit easier! It requires a handful of ingredients, it’s really easy to put together and it can be ready in under half an hour. Plus you’re getting some healthy fats and veggies and you can pair it with whatever you’ve got in the cupboard or fridge. It’s minimal effort but maximum flavour!

I’ve gone with the classic combination of lemon and dill to flavour this salmon, but we’ve also added a little bit of garlic and honey too. The honey adds a little bit of sweetness to balance out the acidity of lemon juice while the garlic just gives a little extra kick of flavour without it being too overpowering. By roasting the asparagus alongside the salmon it takes on some of the flavours of the marinade while also developing a little caramelisation for bonus flavour. Winner!

On top of all of that amazing flavour, this recipe is perfect for meal prepping. You could bake the salmon fillets and asparagus on a Sunday, pop it in a lunch box with some grains, potatoes or salad and you’ve got lunches sorted for the upcoming week. What’s not to love?!

How to make Honey, Lemon & Dill Salmon & Asparagus

Time needed: 30 minutes.

  1. Add the dill, lemon juice, lemon zest, honey, garlic, salt, pepper and olive oil to a bowl and stir to combine.

  2. Add the salmon fillets and coat them in the marinade. Leave to marinate for 5 minutes to an hour.

  3. Lay the asparagus on a baking sheet with a drizzle of oil then place the salmon fillets on top of the asparagus. Spoon the remaining marinade over the salmon.

  4. Bake in a pre-heated oven for 15-18 minutes until the salmon fillets are cooked through and flaky.

How to store lemon dill salmon and asparagus:

Allow the salmon and asparagus to cool at room temperature for no more than 2 hours. Once cooled, transfer the salmon and asparagus to a Tupperware container and store in the fridge for 3 to 4 days.

How to reheat lemon dill salmon and asparagus:

To reheat this recipe transfer the salmon and asparagus onto a baking sheet and cover with tin foil. Place in a pre-heated (180 degrees Centigrade) oven for 10 – 12 minutes until everything is heated through.

Alternatively, you could heat the salmon and asparagus up in a microwave. Transfer to a microwave safe container, cover and heat in a microwave for up to 3 minutes. Cook until the food is piping hot all the way through. The length of time it takes to heat in the microwave will vary depending on the strength of your microwave.

What goes with salmon and asparagus?

This salmon and asparagus recipe is very versatile – you could pair it with grains, such as quinoa or rice, with pasta or with something like a simple green salad. I personally like to serve this lemon dill salmon alongside boiled new potatoes and a little butter. Perfect!

Description

In this recipe, salmon is marinated in lemon, dill, garlic, honey and olive oil and is then paired with asparagus for a meal that packs tons of flavour! This simple recipe takes less than half an hour to cook and uses only one baking tray making it a super simple weeknight meal that everyone will enjoy!


Ingredients

Scale
  • 2 tablespoons dill
  • Zest 1 lemon
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 3 tablespoons olive oil, plus a little extra
  • A pinch of salt & pepper
  • 4 salmon fillets
  • 400 grams asparagus, hard ends removed

Instructions

  1. Pre-heat oven to 200 degrees Centigrade.
  2. Create the marinade by mixing the dill, lemon zest, juice, honey, garlic oil, salt and pepper.
  3. Add the salmon to the marinade and move it around until it is fully coated. Marinade the salmon fillets for at least 10 minutes, but up to an hour if you have time.
  4. Lay the asparagus spears on a baking tray with a drizzle of oil.
  5. Place salmon fillets on top of the asparagus and spoon the remaining marinade over the salmon.
  6. Bake for 15 to 18 minutes, until the salmon is cooked through and flakey and the asparagus has taken on a little colour. Serve and enjoy!
